HOW TO MAKE PUMPKIN PIE OATMEAL WALNUT RAISIN COOKIES, IF YOU LIKED IT SAY HELLO
- 1 1/2 cups all-purpose flour
- 1/2 cup wheat flour
- 1 1/2 cups old-fashioned oats
- 1 tsp baking soda
- 1 tsp ground cinnamon
- 1/2 tsp pumpkin pie spice
- 1/8 tsp allspice
- 1 cup butter softened
- 1 cup granulated sugar
- 1 cup brown sugar
- 1 cup pure pumpkin not pie filling
- 1 egg room temperature
- 2 tsp vanilla extract
- 1 cup walnuts
- 1 cup raisins

Combine flour, oats, baking soda and spices in a medium bowl and set aside.

Cream together butter and sugars until light and fluffy.

Beat in egg and mix until well combined.

Add pumpkin, egg, and vanilla and mix until well combined.

Slowly add in flour mixture stirring just until combined.

Stir in walnuts and raisins.

Chill dough for 1 hour.

Preheat oven to 350°F and line baking sheets with parchment paper.

Drop 1/4 cup cookie dough onto lined baking sheets and press dough down slightly with the back of a spoon. (The dough does not spread much when baking.)

Bake for 15-17 minutes or until just lightly browned.

Cool for 3-4 minutes on baking sheets before removing to wire racks to cool completely.
